Admittedly, I hate yogurt commercials. I tend to scream things like "healthy? they have more sugar than a can of coke!" and "oh, yeah something intended to turn a calf into a 400lb cow is going to make you skinny!"
But then something hit me the other night... I thought to myself, "you know, I should do that to tofu!" Channeling my eggnog banana parfaits that were in vegetarian times, I decided to make a sinless key lime pie parfait. with tofu!
This is one delicious treat that's quick to make. Depending on your lime, and how sweet or tart you like your key lime pie, you'll have to make some adjustments as you go with this recipe -- but it's a wonderful protein-packed treat!
Key Lime Pie Parfait Recipe
Servings: 1
Description:
A refreshing and fun breakfast or snack or an easy, no fuss dessert!
Ingredients:
2 whole
whole wheat graham crackers
2 tbsp
lime juice
1 tbsp
lime zest
2 tsp
agave nectar
a dash of
vanilla extract
5 ounces
silken tofu
Instructions:
Crush graham crackers and set aside. Combine tofu with lime juice, lime zest, vanilla extract and agave in a small food processor or blender and whiz until smooth. Taste, adding more lime or sweetener as desired. Layer in a serving glass or dish, crackers... tofu mixture... crackers... tofu mixture. Garnish with lime wedges!
Chef's Notes: grape nuts and other cereals may be used in place of the whole wheat graham crackers.
