Vegan Black Bean & Salsa Soup (Weight Watchers Recipe)

This soup is so easy to make, I almost feel embarrassed blogging about it... almost. It's so delicious I had to share. I've been eating it for as long as I can remember, but I couldn't tell you where it came from or even if it's my recipe. It got me through the many years I was a poor student and for that, I'll always be grateful. Don't let the few # of ingredients fool you, either, it's one of Scott's favorite healthy soups and that says a lot. (Sorry for the crappy photo, this soup is bashful!)

Black Bean & Salsa Soup Recipe

Servings: 2

Black Bean & Salsa Soup photo

Description:

Spicy, quick, delicious and very healthy... you can't go wrong with this easy and nutritious recipe!

Ingredients:

  • 15 ounces black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 cup salsa
  • 1½ cups vegetable broth
  • ½ tsp cumin
  • a dash of hot sauce

Instructions:

Place 1 cup beans, salsa, broth and cumin in a blender and puree until smooth. Transfer to a medium saucepan and add remaining ingredients except chips. Stir to combine and heat thoroughly over low. Once warmed, serve and garnish with broken chips.
